Sweet Potato, Sage & Sausage Hash

2 sweet potatoes
2 large russet potatoes
Salt & pepper
Extra virgin olive oil
1 ½ lb bulk breakfast sausage
2 T butter
1 clove garlic, minced
4 green onions, sliced thin
¼ c fresh, chopped sage
8 poached eggs
Chopped fresh parsley for garnish


Preheat oven to 420 and lightly spray a rimmed baking sheet.


Make it vegan!  Eliminate sausage, butter and eggs.  Add cranberries and diced apples. Drizzle with maple syrup.
