Yesterday was the first day of Spring and it seems appropriate to pull out a fun and easy Spring recipe featuring strawberries. I make my favorite waffle recipe and get that batter in the iron. While the waffles are cooking in a bowl, I mix 1 tablespoon of strawberry jam and 2 teaspoons of warm water for every serving. Then I slice about 5 strawberries per serving and put them in the bowl. Stir this up and let it sit.
When the waffle is cooked, put it on a plate, pile on the strawberries and add a generous dollop of whipped cream. Lovely!
